Ingredients

  • 1.25kg chicken breast
  • 1 cup plain flour
  • 3 cups breadcrumbs
  • 2 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1/4 bunch chopped parsley
  • 2 eggs
  • 200mL milk
  • Oil spray 
  • 10 burger buns
  • 10 tbsp mayonnaise
  • Salad of choice. We recommend lettuce, tomato, grated carrot, cucumber

Method

  1. Pre heat oven to 180°C.
  2. Combine the fresh and dried herbs with the breadcrumbs.
  3. Combine the beaten eggs and the milk.
  4. Crumb the chicken breast using flour, then egg, finish with the herb breadcrumbs.
  5. Spray an oven tray with oil, put the chicken breast on the tray, spray lightly, and cook for 15 minutes.
  6. Slice the burger buns in half, spread a small amount of mayonnaise, top with chicken and salad of choice.
