Ingredients
- 1 pack soba noodles (dried)
- 1 cup red cabbage, finely shredded
- 1 cup wombok, finely shredded
- 1 cup carrot, grated
- 1/2 cup spring onions, finely sliced
- 1/2 cup cucumber, diced
- 1/2 cup red capsicum, finely sliced
- 1 cup frozen edamame, thawed
- 2 tbsp soy sauce
- 2 tbsp honey
- 1 tsp sesame oil
- Sesame seeds to garnish
Method
- Place noodles into boiling water for 4 minutes. Once cooked, drain & rinse under cold
water. Place into a mixing bowl. - Whilst the noodles are cooking, finely shred red cabbage & wombok. Grate carrot, slice
capsicum and spring onions and dice cucumber and add to mixing bowl with noodles and edamame. - Combine soy sauce, honey and sesame oil to a small screw top jar, shake well.
- Pour dressing over noodle mix and sprinkle sesame seeds on top to serve.
