Ingredients

  • 1 kg tinned chickpeas
  • ¼ bunch parsley, chopped
  • Zest of 1 lemon
  • 3 tsp ground coriander
  • ½ tsp black pepper
  • 2 garlic cloves, crushed
  • 80g besan flour/chickpea flour
  • Spray oil

Method

  1. Pre heat the oven to 200°C.
  2. Drain the chick peas, reserve the liquid.
  3. In a food processor, combine the chick peas, parsley, lemon zest, coriander, pepper and
    garlic, blend to a paste.
  4. Add the besan flour and the reserved chick pea liquid to bring the mixture to a thick paste that can be rolled into a ball.
  5. Using wet hands, roll the mixture into balls approx. 20 grams each. Place on a sprayed
    oven tray covered with baking paper and press down to flatten slightly. Lightly spray
    each ball.
  6. Bake for 15-20 minutes, turning half way through. Remove from the oven and allow to cool.
